The word “Umami” originates from Japanese and means “wonderful taste”! It is one of the five basic tastes the human tongue can detect, along with sweet, sour, salty, and bitter. While the word feels familiar, it’s equally difficult to describe. The first reference to the term was made in the early 20th century by Japanese chemist Dr. Ikeda.

The story of “Umami Pasta Fresca”
The idea was born in December 2017 during the founders’ visit to Mercato Centrale in Florence. Among the many tempting food corners, they noticed a small store that produced fresh pasta, cooked it on the spot, and served it in hand-held cups. This inspired Umami Pasta Fresca, which does exactly what its name promises: fresh pasta made right in front of you, cooked with authentic, delicious recipes that are, above all, full of Umami!
They quickly decided to bring this idea to life in their hometown, Alexandroupoli. Every day, fresh pasta is made and paired with handmade, high-quality sauces crafted from the finest ingredients, all bearing the Umami signature.
